Ingredients:
· Dumpling wrappers 30
· Napa cabbage 300 g
· Firm tofu 200 g
· Fresh shiitake mushrooms 150 g
· Carrot 60 g
· Light soy sauce 1 tbsp
· Sesame oil 1 tsp
· White pepper a pinch
· Salt to taste
· Cornstarch 1 tsp
Instructions:
1. Prepare the cabbage
Finely chop the napa cabbage, toss it with a little salt, and rest for about 10 minutes. Squeeze out excess moisture.
2. Prepare the tofu
Drain the tofu and crumble it with a fork. If it is very moist, press it gently in a clean cloth.
3. Sauté the vegetables
Finely dice the shiitake mushrooms and carrot. Sauté the mushrooms in a small amount of oil, add the carrot, and cook for about 1 minute. Cool completely.
4. Make the filling
Combine the cabbage, tofu, mushrooms, and carrot. Add the soy sauce, sesame oil, white pepper, salt, and cornstarch, then mix in one direction until evenly blended.
5. Shape the dumplings
Place a small spoonful of filling in the center of each wrapper. Moisten the rim, fold the wrapper in half, and pinch firmly to seal.
6. Boil the dumplings
Bring a large pot of water to a boil. Add the dumplings and stir gently to prevent sticking. When the water returns to a boil, add a small splash of cool water; repeat twice.
7. Check for doneness
When the dumplings float and the wrappers look slightly translucent, cook for 1 more minute.
8. Serve
Drain well and serve hot with a simple dip of light soy sauce, rice vinegar, and a few drops of sesame oil.
