Weekly Buddhist Diet: Shepherd’s Purse and Tofu Dumplings

Ingredients:

· Dumpling wrappers 30
· Fresh shepherd’s purse 350 g
· Firm tofu 220 g
· Fresh shiitake mushrooms 120 g
· Carrot 50 g
· Light soy sauce 1 tbsp
· Sesame oil 1 tsp
· White pepper a pinch
· Salt to taste
· Cornstarch 1 tsp

Instructions:

1. Wash the greens
Pick over the shepherd’s purse and rinse repeatedly to remove soil.2. Blanch
Blanch for about 20 seconds, cool, squeeze dry, and chop.

3. Prepare the filling
Crumble the tofu; sauté diced mushrooms and carrot and cool.

4. Season
Combine everything with the seasonings and mix evenly.

5. Shape
Fill, fold, and seal the dumplings firmly.

6. Boil
Cook until floating and translucent, then continue for 1 minute.

7. Serve
Drain and serve hot with rice vinegar and soy sauce if desired.
