Instructions:
1. Prepare the ingredients
Soak bean curd sticks; cut potatoes and vegetables into pieces.

2. Sauté the ginger
Heat oil in a pot and sauté ginger slices to release aroma.

3. Fry the potatoes
Add potatoes and stir-fry until lightly golden to enhance flavor.

4. Add bean curd and vegetables
Stir in bean curd sticks, mushrooms, and carrots.

5. Season and simmer
Add soy sauces and sugar, then pour in water to cover ingredients. Simmer 20–25 minutes.

6. Reduce and serve
