Weekly Buddhist Diet: Braised Vegetarian Chicken with Shiitake Mushrooms

Weekly Buddhist Diet: Braised Vegetarian Chicken with Shiitake Mushrooms

Second week of July 2026

Summary:

Braised Vegetarian Chicken with Shiitake Mushrooms is a classic Chinese vegetarian dish commonly served in Buddhist restaurants and traditional home cooking. Vegetarian chicken, made from soybean products, develops a golden exterior when lightly pan-fried before being gently braised with fresh shiitake mushrooms. The mushrooms release their rich natural umami, while the vegetarian chicken absorbs the flavorful sauce, creating a hearty, savory dish with a satisfying texture.

Shiitake mushrooms are rich in dietary fiber, B vitamins, minerals, and beneficial polysaccharides. Vegetarian chicken provides high-quality plant protein, calcium, and iron, making this dish both nutritious and filling. Cooked with minimal oil and gentle braising, it preserves the natural flavors of the ingredients while delivering a wholesome and delicious plant-based meal.

Ingredients:

· Vegetarian chicken 300 g
· Fresh shiitake mushrooms 200 g
· Red bell pepper 1/2 (sliced)
· Light soy sauce 1 tbsp
· Vegetarian oyster sauce 1 tsp
· Dark soy sauce 1/2 tsp (optional, for color)
· White pepper a pinch
· Salt to taste
· Cornstarch 1 tsp
· Water 120 ml
· Sesame oil 1/2 tsp
· Vegetable oil 1 tbsp

Instructions:

1. Prepare the ingredients
Slice the vegetarian chicken into pieces about 1.5 cm thick. Wash the shiitake mushrooms and halve any large ones. Slice the red bell pepper.

2. Pan-fry the vegetarian chicken
Heat the vegetable oil in a pan and fry the vegetarian chicken over medium heat until both sides are golden brown. Remove and set aside.

3. Sauté the mushrooms
Using the remaining oil, stir-fry the shiitake mushrooms for about 2 minutes until fragrant and they begin to release their juices.

4. Prepare the sauce
Combine the light soy sauce, vegetarian oyster sauce, dark soy sauce, white pepper, salt, cornstarch, and water in a bowl. Stir until smooth.

5. Combine the ingredients
Return the vegetarian chicken to the pan and add the red bell pepper. Toss gently.

6. Braise
Pour in the prepared sauce, cover the pan, and simmer over low heat for about 5 minutes so the vegetarian chicken absorbs the mushroom flavor.

7. Finish the dish
Remove the lid and cook over medium-high heat until the sauce is slightly reduced. Drizzle with sesame oil and stir gently.

8. Serve
Transfer to a serving plate, spoon the mushrooms and sauce over the top, and serve hot.

Plant-Based Wellness Tip

Pan-frying the vegetarian chicken before braising gives it a firmer texture and helps it absorb the sauce more effectively. If using dried shiitake mushrooms, soak them thoroughly and add a small amount of the soaking liquid during braising for an even richer mushroom aroma.

Eat healthy, enjoy plant-based meals every week!
