Weekly Buddhist Diet: Pan-Fried Vegetarian Stuffed Flatbread

Summary:

This pan-fried vegetarian flatbread has a golden crust and a juicy filling of white radish, tofu, glass noodles, and shiitake mushrooms. The radish brings gentle sweetness, tofu adds tenderness, and the noodles absorb the savory vegetable juices. It works well as breakfast, a main dish, or a portable snack.

White radish contributes water and dietary fiber, tofu provides plant-based protein, and the wrapper and noodles supply carbohydrates. Using only a thin coating of oil keeps the cooking method relatively light.

Ingredients:

· All-purpose flour 400 g
· Warm water 220 ml
· White radish 400 g
· Firm tofu 200 g
· Dried glass noodles 60 g
· Fresh shiitake mushrooms 100 g
· Light soy sauce 1 tbsp
· Sesame oil 1 tsp
· White pepper a pinch
· Salt to taste
· Vegetable oil as needed

Instructions:

1. Make the dough
Gradually add warm water to the flour and knead until smooth. Cover and rest for 30 minutes.

2. Prepare the radish
Shred the radish, toss with a little salt, rest for 10 minutes, then squeeze out excess moisture.

3. Prepare the filling
Soak and cut the noodles. Crumble the tofu and sauté the diced mushrooms; cool completely.

4. Season
Combine all filling ingredients with soy sauce, sesame oil, white pepper, and salt.

5. Shape
Divide and roll the dough into circles. Add filling, seal, and gently flatten each parcel.

6. Pan-fry
Brush a pan lightly with oil. Cover and cook over low heat for about 4 minutes per side until golden.

7. Serve
Rest for 2 minutes before cutting and serving hot.

Squeeze the radish thoroughly so the filling does not weaken the wrapper. Keep the heat low and cover the pan so the center cooks before the crust becomes too dark.
