Ingredients:
· Chinese yam 200g (peeled and cut into chunks)
· Goji berries 20 pieces (rinsed)
· Red dates 3 (pitted, optional)
· White fungus a few pieces (soaked and torn, optional)
· Water 800ml
· Salt a pinch
· Vegetable oil a few drops (optional, for aroma)
Instructions:
- Prepare the Ingredients
Peel and cut the yam into chunks (use gloves if needed). Rinse goji berries, pit and halve the red dates, and soak the white fungus until soft, tearing into small pieces. - Blanch the Yam
Boil water and blanch the yam chunks for 1 minute to remove excess starch and stickiness. Drain and set aside. - Make the Soup Base
Pour water into a pot, add red dates and white fungus, and bring to a boil. Reduce to low heat and simmer for 10 minutes. - Add the Yam
Add the blanched yam and simmer gently for another 15 minutes until soft and slightly thickened. - Add Goji Berries and Season
Add the goji berries and cook for another 3–5 minutes. Season lightly with salt to taste. - Serve and Enjoy
Ladle into bowls, optionally drizzle a few drops of vegetable oil, and serve warm.
